Is it as simple as booting from a windows disk and having everything wiped then re-installed

That will work, when you select which drive to install windows on it will ask you if youd like to repair or do a fresh install (if you select the drive that previously had windows on it.) CHooase clean install or whatever and it will tell you it is going to format the drive that you have selected. If you really want to get everything I would delete the partition as well and re-make it.
